Creamy Lettuce Soup Recipe

Yield: 6 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients

  • 1 head of lettuce, washed and roughly chopped
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil or butter
  • 3 cups of vegetable or chicken broth
  • 1 medium potato, peeled and diced
  • 3/4 tsp ground coriander
  • Salt and pepper to taste
  • Optional toppings: croutons, grated cheese, chopped fresh herbs

Instructions

  1. In a large pot, heat the olive oil or butter over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 5 minutes.
  2. Add the chopped lettuce to the pot, stirring occasionally until it begins to wilt, about 3-4 minutes.
  3. Pour in the vegetable or chicken broth, add the diced potato & coriander. Bring the mixture to a simmer and let it cook until the potatoes are tender, about 15-20 minutes.
  4. Once the potatoes are cooked through, remove the pot from the heat and allow the soup to cool slightly.
  5. Using an immersion blender or countertop blender, carefully puree the soup until smooth and creamy.
  6. Season the soup with salt and pepper to taste, adjusting as needed.
  7. Serve the hot lettuce soup in bowls, garnished with your choice of toppings such as croutons, grated cheese, or chopped fresh herbs.
