How to make Gur papdi - Gol papdi is a Gujarati sweet dish prepared using wheat flour, jaggery and ghee with cardamom flavour. This sweet is usually made in winter and healthier choice too.

I was not aware of this sweet until Ume Rubab Mirza, a reader friend from Karachi sent me this recipe. Thank you 🙏

Referred to Tarla dalal’s video though for measures as the recipe sent by the reader was in grams.

I got help from my friend sangeeta for translating too. Knew it would be tasting great with wheat flour, jaggery and ghee.

And it is true, it was really a great sweet, quick to make with more natural ingredients like wheat flour, ghee and jaggery (gur).

Nothing fancy but amazing sweet that can be prepared for a quick sweet craving or even for kids, this is really good.

My notes

Nuts are added as garnish but it adds a nice crunch and balances the sweet. Make sure to not skip nuts.

I have garnished with nuts, almond here, but you can mix it in the sweet too.

Thought it may be difficult for cutting, so I garnished the nuts.

Used multigrain atta and had no issues, so you can also try that. You can also try with any of the millet flour mixed along with atta.

But the nuts, along with this sweet gur papdi is amazing. I would recommend almond as I have used here or even cashew nuts, as in the recipe.

Since I have used multi grain atta, the ghee quantity it needed was less.

Using regular atta may take more ghee as I got feedback, so updated the recipe with extra 1 tablespoon ghee (still you may see less in video)

How to make gur papdi

Gur papdi is a sweet dish prepared using wheat flour, jaggery and ghee with cardamom flavour. This sweet is usually made in winter.

Instructions

  • Heat a pan with ghee and roast ½ cup wheat flour until golden. Do it patiently in medium flame until the colour changes and it turns fragrant.

  • Once the flour is golden in colour, switch off the flame. Add grated jaggery to it along with cardamom powder. Make sure to use only finely grated jaggery with out any lumps.

  • Once the jaggery melts, transfer to a greased plate and level it. Do not stir more than needed, otherwise will crumble. Garnish with nuts.

  • Cut into desired shape, I cut into squares.

Notes

  • I have halved the recipe as I wanted to try less. Otherwise, if you want more, you can double the recipe (wheat flour 1 cup, ghee 6 tbsp, 1 tbsp, jaggery – ¾ cup.
  • Take care not to burn the flour, otherwise it will be spoilt.
  • I powdered the jaggery in mixer. You can grate too. But make sure to grate / powder. otherwise, it will not easily melt in the heat.
  • I used a butter paper over the mixture and leveled. Be quick in spreading.
  • Do not stir for long time after jaggery melts, transfer it to tray soon.
  • You can add the nuts along jaggery.

    we called this sweet as "PAAK".
