Making low carb simple

Instructions

Hamburger patties and gravy

  1. Combine all the ingredients for the hamburgers in a large bowl using a wooden spoon or clean hands. Don't over-mix since that can make the patties tough. Use wet hands to form oblong patties.

  2. Add olive oil or butter to a large frying pan. Fry over medium-high heat for at least 10 minutes or until the patties have browned. Flip them a few times for even cooking.

  3. In a small bowl, whisk together the tomato paste and cream. Add this mixture to the pan when the patties are almost done. Stir and let simmer for a few minutes. Season with salt and pepper to taste.

  4. Sprinkle with chopped parsley before serving.

Butter-fried green cabbage

  1. Shred the cabbage finely using a food processor or sharp knife.

  2. Add butter to a large frying pan.

  3. Place the pan over medium-high heat and sauté the shredded cabbage for at least 15 minutes or until the cabbage is wilted and golden brown around the edges.

  4. Stir regularly and lower the heat a little towards the end. Add salt and pepper to taste.

Tip!

Switch it up! These patties pair well with any sautéed vegetable… What do you love? Onions, mushrooms, spinach, Brussels sprouts, asparagus, green beans…

Could I use red cabbage in place of the green cabbage?

Sure, just be aware that red cabbage has more carbs than green cabbage.

So I made this without the cabbage. Except, I didn't make it into patties. I just fried up the ground beef in a pan. I did add two eggs just for some filler (stretch it a bit.) I didn't have feta, so used goat cheese. At the end I just added the sauce. It was delicious. Almost like a chili.

You may have better results if you freeze them while raw. If cooked and frozen, they may be dried out when thawed and heated.

I am sorry for the confusion. There is a notation after the butter and oil in the ingredient list that they are for frying.
1 tbsp olive oil, for frying
    2 tbsp butter, for frying

Serving size for this one is about 6 oz of hamburgers. For each recipe, you can visually divide your finished product by the number of servings your recipe is set.

There are 2 ways around this! You can omit the egg if you're making one serving or you can make 4 servings which will use one whole egg. You can freeze the patties before cooking and they will freeze and thaw well! While the ability to scale recipes to make fewer or more servings is very helpful, it can result in some non-standard measurement amounts.

You should not need to drain the grease as it includes the butter, olive oil, and fat from the meat.

I have made this a few times now. With a big family I make 12 servings and have changed up making them in the skillet. I'll fry 4 patties at a time just until each side has a nice char on them. I then transfer to a metal baking pan and pour the gravy sauce on top. Baking at 350 degrees in the oven for 25 min.

This was my first consciously cooked keto meal. Lucky me it was so delicious that even my picky husband was totally convinced. He only complained about the greasy cabbage. Well, after one year and a half he doesn't even notice. This dish became a staple and experienced variations on the veggie side: I tried mashed broccoli (try with mascarpone), cheesy cauliflower or - even better - Brussels sprouts with a cheesy sauce. During it's evolution, the patties became cheesier but the gravy stayed the same.
Thank you for this great inspiration!

I'm wondering if you have dairy-free recipes - I have been allergic to dairy my whole life so that's out. Then I got off of Gluten - that went OK - and now I m getting rid of sugar cold turkey.

BUT so many of your recipes use cream etc.

I can tolerate cheese as far as I know - OLD cheese.

But is there a separate listing for dairy free in your lists?

Such a simple, quick recipe with absolutely wow results. This is in our regular rotation. I add a finely chopped shallot to the burger mix, & I deglaze the skillet after the burgers are done, add a bit of butter, and sauté the cabbage - gives it a wonderful meaty flavor with a bit of a feta bite. Hands-down, this is in our top three favorites.
